Smoked Salmon Crostini

Ingredients

  • 1 French baguette, cut into 1/2 inch slices
  • 1 tablespoon extra virgin olive oil
  • 8 ounces whipped chive cream cheese
  • 4 ounces Nova lox salmon
  • ¼ red onion, very thinly sliced
  • 1 tablespoon Everything But the Bagel seasoning
  • 1 tablespoon finely chopped chives or scallions

Instructions

  • Preheat the oven to 350ºF. Arrange baguette slices on a baking sheet and brush with olive oil. Bake for 8-10 minutes, or until lightly golden brown on the edges, then let cool slightly.
  • Spread about a tablespoon of cream cheese on each crostini, then top with smoked salmon, a couple of onion slices, a shake of Everything But the Bagel seasoning, and a pinch of chives or scallions.
  • Serve immediately on your favorite plate, cutting board, or platter and enjoy! Makes 15.

Notes

If you can’t find chive cream cheese, feel free to chop a few tablespoons of chives and mix into softened cream cheese. You can also sub chopped scallions instead!
