Meet my sheet pan Moroccan chicken with sweet potatoes and cauliflower infused with cinnamon, cumin and turmeric spices then drizzled with a crazy good zesty feta dressing plus the addition of pistachios, cherries and a little cilantro for freshness.
This meal is HELLA FLAVORFUL and yes, only takes about 45 minutes from start to finish!
Ingredients in this healthy sheet pan Moroccan chicken
The theme of this gorgeous sheet pan Moroccan-spiced chicken is flavor and texture. You’ll find tender, crunchy veggies, cozy, warming spices, fun garnishes, and a drizzle of creamy feta sauce to bring everything together. Here’s what you’ll need to make this recipe:
- Chicken: I prefer using boneless skinless chicken thighs in this sheet pan dinner because they’re extra juicy and soak up all of the flavors well. Feel free to use chicken breasts if you’d like.
- Veggies: we’re roasting up the chicken with sweet potato, cauliflower, carrots, and onion.
- Spices: this dish gets a handful of Moroccan-inspired spices from cumin, turmeric, cinnamon, garlic powder & cayenne pepper.
- Garnishes: I love to top the meal with dried cherries, fresh cilantro, and roasted pistachios.
- For the sauce: we’re using my famous Creamy Feta Yogurt Dressingfor a delicious drizzle, made from greek yogurt, garlic, feta crumbles, fresh lemon juice, a little water, salt & pepper.
With each bite you’ll get flavorful chicken & veggies, sweetness from dried cherries, a little crunch from roasted salty pistachios and a creamy, cooling finish with the feta yogurt sauce. SERIOUSLY SO FREAKING GOOD YOU GUYS.
Customize your Moroccan-spiced chicken meal
With all of the beautiful textures and flavors, this recipe is easy to customize to your taste preferences! Here are some suggestions:
- To make vegetarian: try swapping the chicken for extra firm, cubed tofu! You can use the same spice mixture and bake it with the veggies.
- For the dried fruit: dried apricots, chopped Medjool dates, or golden raisins would also be delicious.
- For the nuts: feel free to omit to keep the dish nut free, or swap the pistachios for roasted chopped almonds.
How to meal prep this easy Moroccan sheet pan chicken
- After cooking everything according to the instructions, allow your chicken and veggies to cool completely and equally divide everything into 4 separate glass meal prep containers. If you’d like you could also add quinoa, chickpeas, couscous or cauliflower rice!
- Feel free to add the dried cherries, cilantro and pistachios, but I’d recommend leaving off the feta yogurt sauce until you’re ready to serve. You can store the sauce in a container like this one and simply add a bit more water, as needed, before using it.
- Store your meal prep containers in the refrigerator for up to 4 days and enjoy a healthy lunch or dinner all week long.

Sheet Pan Moroccan Chicken with Sweet Potatoes & Cauliflower
Ingredients
- 1 ½ pounds boneless skinless chicken thighs
- 1 large sweet potato, cut into ½ inch cubes (about 2 cups cubed sweet potatoes)
- 2 cups small cauliflower florets (from about half a head of cauliflower)
- 1 yellow onion, cut into chunks
- 3 large carrots, sliced into ½ inch thick chunks (or use 6 small heirloom rainbow carrots)
- 3 tablespoons olive oil
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons ground turmeric
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoons garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- Lots of freshly ground black pepper
- To garnish:
- ⅓ cup unsweetened dried cherries (or dried cranberries)
- ¼ cup diced cilantro
- ¼ cup chopped roasted pistachios (or sub roasted chopped almonds)
- For the feta yogurt sauce:
- 1 large garlic clove
- 1/3 cup plain greek yogurt (whole milk or 2%)
- 1/4 cup feta crumbles
- ½ tablespoon fresh lemon juice
- 1 tablespoon water, to thin
- Freshly ground salt and pepper, to taste
Instructions
- Preheat oven to 425 degrees F. Line a large baking sheet or two small baking sheets with parchment paper or foil. Set aside.
- Add chicken thighs, sweet potato cubes, cauliflower, onion chunks, carrot chunks into a large bowl. Add in olive oil, turmeric, cinnamon, cumin, garlic powder, cayenne pepper and salt and pepper. Use clean hands to toss all of the ingredients together until well combined and spices evenly coat chicken and veggies. Pour onto prepared baking sheet (or evenly divide between two baking sheets.) You’ll want to group the vegetables as best as possible: carrots in one section, chicken in one section, cauliflower in one section and sweet potatoes and onions in one section (as indicated in the photos). Bake for 25-35 minutes, rotating the pan(s) and stirring vegetables halfway through to encourage even cooking. You’ll know it’s done when the carrots and sweet potatoes are fork tender.
- While the meal is cooking, you can make the feta yogurt sauce by adding the garlic, yogurt, feta, lemon juice and water to a food processor; process until smooth. Add a bit of salt and pepper to taste and process once more. Set aside until ready to serve.
- Once chicken and veggies are done cooking, remove from oven and immediately sprinkle dried cherries, cilantro and pistachios on top. You can either drizzle the feta yogurt sauce on top of the sheet pan meal or serve it on the side for people to enjoy as they so choose. Serves 4.

Can you grill your chicken instead???
Yes, but you’ll still need to roast your veggies (or you could grill them in a foil pack!)
I made the sauce with dairy free plain yogurt and left out the feta. I added in some diced cucumber instead. It was really good! It needed less water than the original recipe called for. The yogurt flavor tastes so good with the flavor profile of the spices in the dish.

I made this with tofu instead of chicken. I just cubed extra-firm tofu into bite-sized pieces and cooked the rest of the recipe as described. It was fantastic!

The flavors paired so well! Roasted extra veggies so did two pans so they could spread out and get nice and crispy! Also did the chicken separately. Only did 1/2 teaspoon of cinnamon because I was nervous about adding so much but it turned out so tasty! Made the feta sauce which paired nicely and cooked up farro as well. Easy meal with lots of leftovers!

This dish is incredible. I LOVE the spice mix. I didn’t have the ingredients on hand for the garnish or sauce, but it was delicious without. I am putting this into my regular rotation. I will also try to sub chicken with tofu, just to change things up. When I made it, I used chicken breast and cooked them in the air fryer so they would stay moist; I still coated them with the spice mix.

Idea for using frozen cauliflower?? Cook in microwave beforehand or just put on pan while frozen?
I think you could thaw, drain the cauliflower then use it! Might not be as crunchy but still should be okay!

This is so tasty! Took me a lot longer than 20 minutes to prep…maybe 20 minutes without chopping the veg. The sauce is amazing! I didn’t have cilantro so left that out..used almonds instead of pistachios. So tasty. Also I did not group the veg in like groups on pan…I just kept the chicken to one side and left everything else mixed and it was fine. Will definitely make again and may just make the sauce for dip. Made this yesterday for mother’s day with your Moroccan quinoa chickpea salad (except used farro instead of quinoa) and it was SO good everyone loved it! Added some garam masala to the spice blend and some roasted broccoli to veggie medley and everything was perfection! I also cooked the chicken separately from the veggies because I like them a little firm and the chicken took about 45 min to cook. Will definitely be making again and again!

Love your site. I’ve made the recipe twice now. The first time I thought the cinnamon was overpowering, so I cut it way back the second time and added some coriander. Both my husband and I liked it better that way. It’s great with boneless skinless chicken breasts. Gives them great flavor and allows dieters to avoid a few calories without missing out on taste. I added some green beans for the last 15 minutes and they worked well with the spices and other veggies.

Wow Wow Wow. THIS RECIPE IS SOOO GREAT! I doubled the recipe to serve 6 adults and 2 kiddos. Subbed in paprika for cayenne pepper because we were out and had some folks who are afraid of too much spice. We used toasted almonds and dried cranberries in place of the pistachios and cherries because thats what was on hand. JUST SO GOOD. Seriously, everyone was licking the plates. Delicious! I love these meals cause it’s so easy to prep the chicken and veggies days in advance and then just pop them in the oven right before dinner time. Sauce was so good! I added dill to it 😋 I sometimes skip the garnishes, but this time I think they are so important! The cherries, cilantro, and pistachios really added something to overall flavors.

After you’ve tossed your chicken and veggies together with the spices feel free to divide them into separate freezer-friendly bags and freeze for up to 2 months! Then you can bake everything on a sheet pan as-written (but may need a bit of extra time).

Didn’t have cauliflower so I used baby yellow potatoes. Only had white sweet potatoes so used those. I’m dairy free but an avocado cream sauce worked really well with this. This was so good! Everyone who had it raved about it. I increased the spices a bit for extra flavour and used bone-in chicken thighs. I also served this with couscous. The chicken took a bit longer to cook but when everything finally came together, the whole dish was delicious. Will make again.

I made this for my family and they loved it! I doubled it and tossed everything together but put in on 2 large throw away tins so that it could spread out while cooking. Everything cooked fine and I had no problem with the chicken taking longer than the vegetables. We also loved the feta sauce and it was rich despite using yogurt. Excellent dish with unique flavors. Made this last night for myself and friends and we all enjoyed it! I did everything per the recipe but did not have any nuts to garnish. My only issue (and after reading the comments I think it was my error) is there seemed to be quite a bit of liquid on the pan. I think this was from the chicken (maybe too fatty or wet?). Next time I would just put it on a separate pan. I can see this would also be amazing with tofu or just as a huge tray of roasted veggies. The flavor profile was on point!

This is an excellent sheet pan recipe. I’ve made it twice now exactly as written (just doubled). It’s one of those rare recipes that my husband and two teen-aged boys all rave about. Absolutely delicious! We subbed almonds for pistachios (bc we have tons of almonds), accidentally almost doubled the chicken, and totally changed the sauce. But it was sooooo yummy that we will put this on our rotation for sure!!
For the sauce, wifey doesn’t eat feta and we didn’t have lemon juice so I ended up adding a handful of cilantro, subbing like justice for lemon, and subbing grated parm for feta. We were sopping up the sauce with our rosemary bread haha! 🙂

Hi, there! Yes absolutely. I’m not exactly sure how much longer to cook them with the bone in, but you can take the temperature (the inside should read 165º) or cut into them to check.
This recipe is absolutely delicious! I didn’t have cauliflower so I used brussels sprouts instead and it was so yummy! The seasonings combined with the yogurt sauce and tart cherries was such a great flavor combo! I loved making this dish because it was easy to clean up while the sheet pans were baking! 10/10 will make again! Loved it!

Outstanding flavor profile!!!! 🙌🏻 Made on stovetop just using filleted chicken breasts, adding spices all in the form of dried herbs (including onion and garlic), dubbing paprika for cayenne, and sautéing in EVOO. WOW 🤩 Winner, winner!!!! Served with light brown basmati rice, green beans tossed in just EVOO and salt… next time want to add chickpeas. Will definitely make the whole recipe when I have more time! Very good, a nice change from other chicken thigh recipes. My husband made this using butternut squash since we didn’t have a sweet potato and dried ground mustard since we didn’t have turmeric. He didn’t make the sauce since we were missing ingredients but will make it next time. He wasn’t suretyere was enough of the spices but there was!!! He said he will make this again!

This was fantastic! The sauce and dried cherries totally make this dish! Very flavorful and fairly simple to throw together. I did use two sheet pans and tossed half the veggies with oil/spices, then the other half – put them on the sheet pans and then seasoned the chicken last – seemed easier to sort everything out that way for the sheet pans. Was ready in 30 minutes!!! My husband loved this one too!!!
This sounds amazing! I’m planning to make it tomorrow to have later in the week. How do you recommend reheating this when you make it in advance/meal prep? I’ll probably save two servings in the fridge and two in the freezer to have a couple weeks from now- do you reheat in the oven or microwave and if frozen do you thaw first?
Hi, Lori! Great question 🙂 Reheating in the oven will keep everything crispy buy microwave’s fine if that’s easier for you! If frozen, you could put it in the fridge to thaw the day before or defrost in the microwave.

That sauce! Will double next time. I used chicken breasts and took them out of the oven at about “half-time.” They were perfect. Because the cauliflower shrank so much from roasting (as cauliflower does), I’m going to double it next time. Also going to double the onion. Will probably add half again the spices. This was my first sheet pan dinner and it was a success!
I love this recipe so much and make it all the time! I’ve used both chicken thighs and breasts without issue and often add extra veggies. It’s so easy!! The feta sauce is the best part, and I also love the touch of tart sweetness from the dried cherries.

Easy meal and sooooo tasty! Made this for my parents and my Dad kept saying ‘my mouth is alive!’ AKA the combo of spices was amazing. We baked the chicken thighs alone (only needed 15 mins), the broccoli and sweet potato on one sheet, and the carrots and onion on another. The veggies took about 25 mins total to bake and we made sure to rotate the pans – both switching the shelves the pans were on and turning around the pans. The feta yogurt dressing was delish too! 3 of us finished the entire meal – but we were hungry and used less than 1.5 lbs of chicken. Highly recommend – super easy, healthy, and delish!

Made this today. Absolutely amazing! I used cranberries and toasted sliced almonds. I also didn’t measure the yoghurt and feta for the sauce (didn’t feel like dirtying extra things) but it all turned out perfectly! I don’t usually add dried fruit and nuts to my food, but it worked so well with this meal.
This Moroccan sheet pan chicken and vegetables was delicious! We all enjoyed it very much. The sauce was delicious, too. I wasn’t sure the whole garlic clove would get blended up enough, but it did. I followed the recipe exactly except for separating all the components on the sheet pan. That step made no sense since they were already mixed together in the bowl, I didn’t have the time to fuss with it, it would all get mixed back up on the plates anyway, and everything cooked for the same amount of time.
I made this exact to recipe and it was absolutely delicious! The flavors are just divine. I will surely make this again.

This recipe was SO delicious! Simple, easy, fast, and realllly good! I used 1 1/2 inch chunks of boneless chicken breasts. I put all the vegetables in one bowl and the chicken in another, mixed the marinade in a measuring cup and poured 3/4 of it over the vegetables and 1/4 of it over the chicken. Then I roasted the vegetables for 15 minutes, stirred them and pushed them aside enough to make room for the chicken breast bits, and roasted for another 10-15 minutes. Perfect! But as good as this was at this stage the yogurt sauce elevated it to an entirely sublime level! Mmmm!

So fast and easy! This recipe and its warm spices are perfect for mid-week, Winter lunches. I made this for meal-prep on Monday night for the work-week – meat and veggies in containers and the sauce separated in a reused glass jar. I made so much that I shared it with some of my co-workers and they loved it too!

Made this last night. So delicious! I omitted the nuts and cherries. The flavors are really great and the chicken was so juicy. Since the veggies and chicken are all tossed with the same yummy spices, the sauce is a great addition to add some acid and brightness to the dish. This will be apart of my regular rotation. I made this tonight for my gluten free friend. It was amazing. And will definitely put it on my rotation. I changed out cauliflower with some corn off the cob as cauliflower is just too expensive at the moment. For the topping I used a dried cranberry almond and cashew mix. Which really made it few a little posh. Thanks for another great recipe

This was a delicious meal! Loved the flavors, and the colors on the plate just look so beautiful! Also loved that it uses clean ingredients and has a good balance of carbs, fiber, fat, and protein.
However, my fingernails now look pretty yellow and weird, so I might wear gloves or mix the ingredients with a big spoon next time.
Oh, and it made more than I expected, so now I have some amazing leftovers!

I substituted broccoli for the cauliflower, used dates instead of cherries—since these were both what I had. I don’t care for cilantro, so I just added some parsley. Other than that, kept all measurements and ingredients the same. Everything was flavorful and delicious. We rated it a 10/10.

Perfect dinner! I made this last night and kept to the recipe, with the following exceptions: I made it with chicken breasts, instead of thighs; I used sour cream instead of yogurt (since I didn’t have any plain yogurt on hand), goat cheese instead of feta (for the same reason) and raisins instead of cherries. It was still perfect and exceeded all my expectations. I have now printed it out and starred it for a standard go-to success dinner. Many thanks!

This meal was AMAZING!! I highly recommend. There are only 2 of us, so we cut the recipe in half. The plates were gorgeous, filling, and so delicious we wish we made the full portion!! We also substituted the pistachios and dried cherries for dried cranberries and sliced almonds as suggested (because that’s what we had in the pantry). Following this recipe was quick, easy, and the closest my food will ever be to a five star chefs’. Thank you so much!

I want to start off with how much I love your recipes! They’re consistently on point. However, I had an issue with this recipe. Now you may wonder why I gave this 5 stars. Let me explain: I made this exactly as stated. The chicken was undercooked and the vegetables were overcooked and mushy. I pulled off the chicken from the sheet pan with the vegetables and put it back in the oven so it could cook longer. Sadly, the vegetables were beyond salvageable. The chicken, once cooked, was delicious with the feta sauce, cherries, and pistachios.
Here’s what I’ll do differently. Instead of cooking the chicken and vegetables together, I’ll divide the two and have vegetables on one pan and chicken on another. After the chicken has cooked for about 15 minutes, I’ll put in the sheet pan of vegetables. This should do the trick. I’m sure the dish will be over the top when cooked properly. I plan on making this again in about a week.
Sorry to hear that the cooking times varied! I haven’t run into that issue before, so I might suggest chopping the veggies a bit larger (the chicken should cook completely in 35 mins max).
I just made this and it was delicious! Everything tasted so great together. The only thing I left out was the cayenne since we have a little one.

Absolutely delicious and so easy! Made as written, except we subbed halved Brussels sprouts for cauliflower because that’s what we had on hand. The spice mix smells amazing while cooking, and the sauce really adds to the dish overall. Excellent recipe!

Wondering how you would group the veggies into separate groups on the sheet pan when everything is mixed together at the start in a bowl. It seems each different ingredient would have to be done separately. Am I missing something? Can it all be tossed and spread on the baking sheet? Thanks, Jan

Made this tonight and it was a big hit! I mixed the chicken separately from the veggies but other than that, followed the recipe exactly. Didn’t have any of the garnishes, or yogurt for the sauce, so just squeezed lemon juice over the meal and it was delicious. Time in oven was exactly perfect – I did heat up the tray first and I didn’t bother with foil. Thank you for a super quick, healthy meal!
