Say HELLO to my healthier turkey lasagna. She’s a beauty, isn’t she?
This was my first lasagna recipe on the site and I can honestly say I love lasagna more than any other Italian food. Back during my college years, I had asked my mom to make me a spinach and butternut squash lasagna for my birthday meal; it is still one of my favorite meals of all time. I can remember the warm butternut squash sauce between noodles and tons of mozzarella. (If you haven’t tried my roasted veggie butternut squash lasagna yet, this is your sign!)
I loved the recipe SO much that instead of sharing the leftovers with any of my roommates, I cut the lasagna up into individual servings, ate it for lunch and dinner for 4 days straight, and then froze the remaining slices so that I could enjoy it again the following week.

Anyways, if you haven’t made this AK classic it’s about time you do it up. It’s the best holiday meal or comfort food recipe that everyone loves!
What makes this lasagna recipe healthier?
Just like traditional lasagna recipes, this one is filled with flavor and delicious, cheesy layers. I’ve made this lasagna. bit healthier by using lean ground turkey instead of ground beef
Ingredients in this healthy turkey lasagna
I decided I wanted to make a classic version of lasagna but with a turkey meat sauce instead of beef and little creative twists here and there. It turned out a million times better than I could have ever expected, so let’s discuss what’s all involved:
- Homemade tomato sauce: I like to make this with a homemade tomato basil infused sauce. I use tomato sauce, crushed tomatoes and tomato paste to thicken. Then I like to add Italian seasoning, garlic, oregano, fennel, a hint of pure maple syrup, nutmeg (a secret Italian ingredient). Finally, I stir in fresh basil to give it a beautiful, fresh and flavorful taste. It’s pure love.
- Lean ground turkey: I’m a HUGE fan of ground turkey. It’s just so easy to make recipes with and I love the nutritional profile. I use the 94% lean ground turkey, but you could also use 99% lean — just know that it won’t be as flavorful or moist. Check out other recipes you can use with ground turkey here.
- Lasagna noodles: I love to use whole wheat lasagna noodles in this recipe for a nice boost of whole grains.
- Fresh basil: Between the layers of noodles isn’t just cheese and sauce, but also fresh basil leaves. It adds a little something special to the lasagna and increases the flavor profile.
- CHEESE: Also between the layers of noodles is fresh mozzarella cheese, parmesan and creamy ricotta. This also contributes to the lasagna flavor, so do not skip the cheese (an excellent source of protein!)
Easy ways to customize
This healthy turkey lasagna is delicious as-is, but there are a few simple ways to customize if you’d like!
- Add a boost of veggies. If you’re looking to add some more veggies to this healthy turkey lasagna, feel free to mix some cooked spinach into the ricotta layer, or even add some mushrooms to that turkey meat sauce!
- Choose your noodles. As I mentioned, I like to use whole wheat lasagna noodles in this turkey lasagna recipe for a boost of whole grains. However, you can use regular lasagna noodles or even gluten free noodles to keep the lasagna gluten free! I do not recommend using no-cook noodles as the texture will be different. If those are the only noodles you have, they will still work in the recipe.
- Try a new meat. I opted for ground turkey in this lasagna recipe to lighten it up, but you’re welcome to use ground beef or even a flavorful, ground turkey sausage.
How to make the best turkey lasagna
- Make the meat sauce. Start by cooking your ground turkey with garlic and onion, then stir in the rest of the ingredients for the tomato sauce. Cover and let it simmer on low to thicken up.
- Cook your noodles. While the sauce is simmering you can cook your lasagna noodles until just al dente.
- Make the ricotta mixture. While the noodles are boiling you can mix together the ricotta, egg, basil, salt & pepper.
- Layer your lasagna. Now it’s time to assemble! Spread turkey meat sauce on the bottom of a prepared baking dish, place lasagna noodles on top, spread with the ricotta mixture, then top with basil and mozzarella slices. Add more meat sauce and parmesan cheese, then repeat the layers once more.
- Bake & serve. Cover the lasagna with foil and bake it for about 25 minutes, then remove the foil and bake it for 20 more. Garnish with extra basil & parmesan, cool and serve it up!
Tips for making perfect turkey lasagna
With these super easy tips, you’ll have the most delicious turkey lasagna every time:
- Don’t overcook the noodles. Make sure to boil the noodles just until al dente, not fully cooked because they’ll cook more when you bake the entire lasagna. Say goodbye to mushy noodles!
- Use room temp ricotta. The ricotta mixture is easiest to mix with room temp ingredients, so I suggest letting the container of ricotta and the egg sit out a bit to come to room temp.
Make it ahead of time
Yes, you can easily make this healthy turkey lasagna ahead of time! Simply assemble the lasagna completely as directed, cover and place it in the refrigerator one day before serving. It’s the perfect way to save time during busy weeks. When you’re ready to serve, bake it up as directed and enjoy!
How to freeze lasagna: two different ways
Another thing I absolutely love about this meal is that the lasagna is freezer-friendly! There are two methods to freezing lasagna:
- Bake first, then freeze. You can either bake it first, then cool to room temperature, slice into servings, place in freezer-safe containers and then freeze. Or you can bake it, bring to room temp, and then freeze the entire pan. Just make sure you double wrap it so the lasagna does not dry out. This is assuming you are freezing the entire pan. Once ready to reheat, thaw it out. Then bake, covered at 350 degrees F for 30-45 minutes or until heated through.
- Freeze before baking: To freeze before baking, simply assemble the lasagna as written in the instructions, then double wrap with plastic wrap and foil and freeze for up to 3 months. Once ready to bake, thaw out then bake according to instructions.
Personally, I like to cook mine first, then freeze it in individual portions so I can take it out for meals as needed. I just reheat my serving in the microwave. YUM.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- For the sauce:
- 1 tablespoon extra-virgin olive oil
- 6 cloves garlic, minced
- 1 pound 93% lean ground turkey (or use ground turkey sausage for even more flavor!)
- 1 white onion, finely diced
- 1 teaspoon kosher salt
- 1 (28 ounce) can crushed tomatoes
- 1 (6 ounce) can tomato paste
- 1 (15 ounce) can tomato sauce
- 1 tablespoon pure maple syrup
- ½ cup water
- ¼ cup julienned fresh basil
- 2 teaspoons italian seasoning
- 2 teaspoons dried oregano
- 1 teaspoon whole fennel seeds
- ½ teaspoon red pepper flakes
- ¼ teaspoon nutmeg
- 1 teaspoon salt, plus more to taste
- Freshly ground black pepper
- For the lasagna noodles:
- 10 regular, whole wheat or gluten free lasagna noodles
- For the ricotta mixture:
- 1 (15 ounce) container part skim ricotta
- 1 egg
- ¼ cup fresh basil leaves, finely chopped
- ½ teaspoon salt
- Freshly ground black pepper
- For the layers:
- ¼ cup packed fresh basil, finely chopped
- 16 ounce fresh whole milk mozzarella, shredded
- ½ cup grated parmesan cheese
- To garnish:
- ¼ cup grated parmesan
- Fresh basil
Instructions
- Add oil to a large pot or dutch oven and place over medium high heat. Once oil is hot, add in garlic and cook for 30 seconds, then add in the ground turkey, onion and kosher salt and cook until turkey is no longer pink. Stir in crushed tomatoes, tomato paste, tomato sauce, water and pure maple syrup. Next add in fresh herbs & spices: basil, italian seasoning, oregano, fennel, red pepper flakes, nutmeg and salt and pepper, to taste. Cover and simmer on low while you cook the lasagna noodles.
- Bring a large pot of heavily salted water to a boil. Cook the lasagna noodles for 6-8 minutes or until al dente, then drain and rinse with cold water. Another option is to soak the lasagna noodles in very warm (hot) water for 20-30 minutes if you do not want to boil them. (You can also use no cook lasagna noodles, but they aren't my favorite!)
- While the lasagna noodles are boiling, make the ricotta mixture: In a medium bowl, mix together the ricotta, egg, basil and salt and pepper.
- Preheat oven to 400 degrees F. Grease a 9x13 inch baking pan with nonstick cooking spray.
- To assemble the lasagna, spread 1 1/2 cups of the turkey meat sauce over the bottom of the baking dish. Place 5 of the cooked lasagna noodles on top, 4 vertical and 1 horizontal. Spread with half of the ricotta cheese mixture, 2 tablespoons diced basil, then top with 1/3 of the mozzarella. Next, add 1 1/2 cups of the meat sauce on top of the mozzarella and sprinkle with 1/4 cup of parmesan cheese. Repeat layers once more: remaining noodles, ricotta, basil, 1/3 of the mozzarella slices, any remaining meat sauce and 1/4 cup parmesan. Top with remaining mozzarella.
- Cover with foil and bake covered for 25 minutes. Remove foil and bake another 20 minutes. If you'd like bubbly, golden brown cheese, broil the top for 2 minutes or until mozzarella is golden brown. Garnish with 1/4 cup parmesan and extra basil. Cool for 15-20 minutes before serving. Serves 12.

Just wanted to know what fresh mozzarella is? The thicker white mozzarella that you would use for caprese salad ? Or regular slide mozzarella from the deli? Thank you!,,

I’m in the process of making this. Love, adding the fennel to mimic a sausage. Really excited for this tonight. However, I’m curious about the fresh mozzarella I find whenever I cook with it it gets very watery. Did you find this to be experience I have fresh mozzarella I can use or Low moisture blocks. This was a big hit for the family including parents. Forget looking at it as a turkey lasagna, its better than ANY Lasagna you’ll ever have. Worth the prep time. I did use easy bake lasagna but followed everything else exactly. Will be making this again soon.

I did not have fresh basil but I had homemade pesto in the freezer so I mixed some of that with the ricotta and also diced kale. SUPER good! Love you!

Delish but the prep time is way longer than stated and I used barely 1/2 a box of noodles and had to throw the rest away while not having enough ricotta mixture 🤷🏽♀️

This was so delicious! I believe the sauce makes the recipe. It has a deep, spicy flavor that brightens up the lean turkey. I only used half of the fresh mozzarella because I read the recipe wrong, but it still came out wonderfully.

hi! If I make this the night before would i still soften the noodles? and just cover it with foil overnight in the refrigerator? Would you take it out and let it get to room temperature before baking or should that not matter??
Hi! Yes you should still soften the noodles… although technically this isn’t necessary if you have the pre-cooked ready noodles. Let it come to room temperature while you preheat the oven. Then it will be good to go 🙂
What’s the sodium content? Is this ok for a low-sodium diet?
I don’t typically calculate the sodium as everyone uses different brands + amounts of salt depending on their taste preference. I’d suggest looking up the sodium content in the brands of turkey, sauce, etc. that you’d like to use!

Absolutely delicious! I loved the strong basil flavor and the sweetness of the sauce. I left out the fennel seeds because I don’t care for fennel but otherwise made it as written. My husband wished there was more meat and mozzarella (unavoidable for a light recipe) but didn’t mind that it was turkey instead of beef or that it was whole grain pasta. Great recipe. This will become a part of the family rotation.

If I could choose to eat lasagna every day I probably wouldn’t be able to stop myself. Anyway, I liked the idea of your healthier lasagna so I made it and my family loved it (yes I shared it with the family even though I loved your idea of eating lasagna for 4 days in a row). This recipe is a keeper. I’ll be making it again soon. I didn’t have the fennel seeds but the flavor was still amazing. After my husband had a heart attack we started eating low fat and low sodium diet. It’s difficult to find recipes that fit both. With a little bit of reading labels the low sodium is easily achieved. The fat content might be a little higher, because of all the cheese, but it’s a splurge for us. One thing that we noticed was that it’s sooo much better after it’s been in the refrigerator for a day or two (leftovers). This time I made it the night before, so hoping that we get all the blending of those wonderful herbs and spices. And I froze half for future indulgence.

Now that we’ve tried this, my family prefers turkey in lasagna instead of beef. This truly is mouth-watering–the best lasagna we’ve ever had! Our only little tweak is during assembly. This recipe makes quite a bit more sauce than the lasagna can hold, so we use only 1 &1/2 cups of sauce for the top layer, too, instead of “any remaining sauce”. We save any extra sauce in the fridge for a few days to use over ziti or shell pasta for an additional excellent meal. Also, do not omit the fresh basil, it’s really important for this recipe.

I get all of my recipes from the internet and I never leave reviews… but THIS LASAGNA DESERVES 5 STARS. I also never use all caps, but again, this is the best lasagna I’ve ever had. I followed the recipe exactly as written, although I did add some sliced zucchini and mushrooms during assembly because I love vegetables. I also used fresh lasagna noodles, so there was no need to boil them. I have no idea if this freezes well because my family polished it off too quickly. Usually, my lasagna’s don’t taste that good until the next day, but this one was delicious straight out of the oven and just as good after a night in the fridge. I think the fresh basil and the sliced mozzarella really made this dish amazing.

I used a jar of tomato basil marinara instead of making the sauce and simply sauteed the onions and garlic with the turkey and then added the jar of sauce. It still tasted amazing in the end! I will make the scratch version next time, but very impressed with how this turned out. Kids and husband loved it.

This is my go recipe for lasagna! My family and friends always ask me to make it. The fresh herbs and the secret ingredient, the nutmeg, really make it different. I add sausage sometimes which is elevated by the fennel already in the recipe. Always use fresh mozzarella rather that shredded, it raises the bar! Beautiful recipe. This and your juicy turkey meatballs are my faves!!!!

The lasagna was delicious and I would totally make it again (But on a Sunday). I used regular no-bake noodles (365 brand) and I didn’t have any fennel. My only complaint was it took 2 hours from start to finish – and that’s not counting getting the ingredients together/prepping the onion, etc. A 15 minute prep time is way to short, and I didn’t even have to do anything with the noodles.

Holy moly this is delicious! I didn’t have fresh herbs so I only used dried and I mixed zucchini with yellow squash. It was so yummy…the whole family loved it , even my 2 year old! I froze the leftovers, can’t wait to eat more of this yummy dish after a busy work day. Thank you!!

One of my all time fav dinner recipes! It’s packed with flavour and absolutely worth the effort. This recipe was great! I love the use of basil and fresh mozzarella! I added a Kale purée into the sauce, and extra can of tomato paste, and fresh tomatoes vs. canned diced tomatoes. I really feel like I’m indulging in a guilty pleasure with half the calories! Thank you for sharing!
I have been making this recipe for a few months now and I love it! For thanksgiving, my boyfriend and I made this lasagna for his Italian grandma. We wanted to do something special for her since we could not celebrate this year together. His grandma just called to say how amazing the lasagna was! That is a huge compliment coming from her, the expert of all things pasta. I knew this lasagna was great, but hearing how much she loved it, I just had to share! I enjoyed making this dish. I rarely ever leave reviews but this is a nice treat. A friend recommended adding maple syrupy to their lasagna and I couldn’t remember the details of how to make it, though that recipe is still the best, this one is pretty 5 star too! I love the addition of nutmeg(I grated it fresh). I wouldn’t have thought to do that overall the flavor combinations are amazing. I could have used more meat sauce though. I had to add some pasta sauce to the top. Also, I added parm cheese to m my ricotta and used shredded mozzarella throughout. I just love cheese. Also, I added 2 spoons of maple not one. Overall with my small moderations this has been a delight to Make! 🙂

Totally delicious recipe! I admit I am not a lasagna person. Growing in up in an Italian-American family I think I just had one too many servings of heavy meat laden lasagna that made my stomach feeling uncomfortable afterwards. Fast forward to adulthood where for a time I was vegan, then vegetarian and now I eat dairy, fish, chicken, turkey and lamb (no beef or pork). If I do make lasagna for a special occasion, it is usually a veggie lasagna because I adore veggies. I typically make turkey or chicken meatballs on the side because my family loves them but this holiday season I wanted to save time and decided to try this version by including the protein in the lasagna. Love the addition of fennel to make it taste like sausage and fresh basil. I agree with Monique about the no boil noodles; they’re okay in a pinch, but using regular give the lasagna a better texture (and heft). I used organic Whole Foods brand (not whole wheat). I can’t say I was crazy about the quality of the fresh mozzarella I used from Wegman’s. Next time I’ll buy from Trader Joe’s or Whole Foods, which is where I bought the creamy, grass fed ricotta. I know some people like to substitute cottage cheese, which we like, but not in lasagna, Recipe is wonderful as is except for the addition of maple syrup; our family prefers to sweeten sauce (or gravy as they call it) with a little red wine, which is what I used (about 1/4 cup). I had a little over a cup of sauce leftover, which I froze and will be perfect over some ziti or rigatoni for a future meal.

This was the best lasagna I’ve ever made. Some family members were suspicious of turkey over beef, but they were won over and had 3 helpings. Something about the heaps of ads on this page wouldn’t let me pin it for future reference, this site in general kept making my mac wig out, but I was able to print it. Will stop searching for a lasag recipe, this is perfection!

It has been a long time since I made homemade lasagna but I’m glad I found this recipe to revisit this classic. I used ground beef instead of turkey and cut down the ricotta to about 3/4 of what the recipe calls for and it came out awesome! I even had leftover sauce to save for another random weeknight pasta dish.

My whole family loves this dish. It’s not difficult to make; it’s very delicious. I also use the no boil lasagna noodles and it works out perfectly. The homemade sauce makes this dish very tasty.

This recipe is delicious however my lasagna was too watery coming out of the oven. Even after I let it cool it was too watery. The next day the lasagna was fine though. I may omit the water or cut it down by half next time.

Delicious!! Following a low sodium plan, so used less but no flavor loss. The only other change was parsley instead of basil.

Best Lasagna I have ever made! I followed almost to the tee. I get headches with ricotta so I substituted with lowfat cottage cheese. Sauce was absolutely delicious. My picky 9-year old nephew said it was the best lasagna he ever had. He never likes my food! Lol. Agree with other commenters: perfect out of the oven, but even better as leftovers. This is a keeper!!

This recipe was easy to make, easy to bake, and even better to eat! I have been trying to meal prep more and wow this was the recipe to do that with. I added spinach to mine on top of each sauce layer and did not have fresh mozzarella so I just used the shredded which was just as good (definitely will try with fresh next time!). The only thing, which was mentioned in the instructions, is that I could not find whole wheat lasagna noodles so I just used regular which is fine but next time I want to try and find the whole wheat! I put about 4 slices in the fridge and I am freezing the rest.

Thanks for this recipe, it’s super tasty! I froze the leftovers and ate it for a while too. It’s my second time making it and I’ve pretty much followed it to a T and came out with extra sauce and leftover lasagna noodles. I used a glass 9×13 baking pan and was able to use 3 lasagna noodles for each layer. I think the next time I’ll portion out the ricotta cheese in thirds because I laid out another layer of lasagna noodles on top, but didn’t have enough ingredients to fill it except for meat. The prep time def took a lot longer than 30 mins for me especially with chopping onions, cutting up the basil and mozzarella. Overall, great recipe.. just needs slight adjusting for me!

I love this recipe. First made it for tThanksgiving and everyone was asking for the recipe. I’ve made it 3 times now but for some reason every time I do, it turns out like lasagna soup and I don’t know why
So glad you enjoy it! Hmm that’s strange, does the homemade tomato sauce mixture feel thin/watery? Maybe the brand of store-bought tomato sauce you use is kind of thin? If so, you could try omitting the 1/2 cup of water!

I will definitely be making this again and again! I followed the recipe EXACTLY and it was absolutely fantastic! I usually make a 4 cheese lasagna with ground beef and Italian sausage so I was a little worried that this wouldn’t be popular with the family but it was!! Everyone loved it! Use the fresh mozzarella, fresh basil, fresh ground nutmeg… you won’t regret 😚

I’ve made lasagna for my family a few times but this recipe was everyone’s favorite. We fought over the leftovers! I added spinach to give it some veggies but it’s perfect and I really think the homemade sauce is the key. It’s not even hard to make and doesn’t take much more time than opening a jar of ready made sauce which is another option too.
This is fantastic. Usually I prefer to make veggie lasagna but one of my son’s wanted meat so I searched for the best turkey lasagna recipe and I have surely found it! I omitted fennel as I am not a fan of the taste. But this recipe is just perfect. I really think the fresh basil and mozzarella make it. I will never used shredded cheese for lasagna again!

I had a hard time finding wheat lasagna noodles and went with regular, but order wheat for next time. Everyone loved this recipe! Oh t was soo delicious and plenty to share or freeze for later! Definitely my go to lasagna recipe!!!
Made this tonight for my husband and I- was amazing!!
I used gluten free lasagna noodles and boiled them for about 3 mins even though they were no boil. Made a HUGE difference. They tasted like normal noodles and were amazing. I’ve made other lasagnas recipes before and didn’t boil the noodles and they were a little ‘tough’.
I also went heavy on the red pepper as us Texans like thing spicy 😊
My husband would’ve eaten the entire pan! (If I let him)!

I fed this to my family for diner one night. After everyone had seconds and it was all gone my daughter and son in law commented that that was the best lasagna they had ever eaten. it was then that I told them it was made with turkey. AMAZING!! Used Barilla’s oven ready gluten free noodles (no boil) and you’d never know it was gluten free. This recipe is getting laminated for lots of future use. I had some sauce left over, so I’ll save for a quick plate of spaghetti.

Made tonight with a few subs: 1.) added mushroom chopped with a food processor, 2.) added red and green bell pepper to the onion/garlic mix, 3.) used cottage cheese instead of ricotta, and 4.) used homemade lasagna noodles. It was fabulous and can’t wait to make it again. Exceptional!

I made this recipe just last weekend. It really is the BEST turkey lasagna! Maybe the best lasagna period. The spice combination was wonderful, along with all the fresh basil, and the recipe was sound and easy to follow. I added extra garlic. I used regular lasagna noodles and chose the soaking method which worked well. This is a keeper and I’ll definitely make it again.

Very tasty recipe! I had to adjust it a bit as I was looking for something to use ground turkey I had bought but it still turned out great! I substituted fire roasted crushed tomatoes, and added extra Italian seasoning and garlic powder in place of the fennel seeds, nutmeg, red pepper flakes, and dried oregano as I did not have them on hand. I also did not have any basil so I omitted that as well. I also added 2 chopped zucchini (cut in half then slices) and a bag of spinach to the meat sauce mixture and let simmer for a minute or two before following the assembly instructions to use up some veggies I had on hand. Being that I changed it a bit and it still was great I definitely plan on trying it out with the exact ingredients. So good!

I started by making Turkey meatballs w/homemade sauce in the crockpot. Well turned into a meat sauce. So looked up a nice lasagna recipe, quick fix. Used yours and love it! I doubled ricotta , meat and mozz because hey I have it and left out the onion and salt. Yes it did overflow a bit but had tinfoil down in oven! It tastes spectacular and worked out perfect in a pinch!

Unfortunately for me there was just way too much sauce and it was too tomato forward (weird I know). The only change I made to the recipe was I used 1 lb of ground beef since I didn’t have the turkey. There is a mistake in the writing as well, the list of ingredients says shredded mozzarella, so when prepping everything I shredded, then in the directions it says mozzarella slices. The slices would’ve been better.
Sorry to hear that! I’ve always found that with the herbs and ricotta mixture the tomato sauce pairs perfectly. Thank you for the catch – I always shred the mozzarella so that it can be sprinkled evenly, but you’re welcome to use slices if you’d like!

Hi! I don’t include the sodium content in my recipes because, like you said, it really depends on what brands of ingredients you use. I suggest using low sodium ingredients wherever possible, and omitting any added salt.
