You could try using coconut sugar in place of the brown sugar but I worry that the crumble topping won’t hold together as well!

Hi! Hmmm I think it might make the topping too crumbly. Let me know if you give it a try, but I’d suggest sticking with melted butter or melted vegan butter.

This is AMAZING! Made the filling and oat cookie topping exactly as is but topped it with Jeni’s cinnamon roll ice cream at the end instead of the chocolate. Incredible flavor and I like that it’s on the healthy side. Another winner!
