I’m so ready for 2014 you guys! Not just because I feel like it’s a fresh start but because I like getting back to the root of things and into a routine. Each new year I like to take a little bit of time to reevaluate what’s important in life and to find a little inner peace.
Oh and I think I forgot to mention that I turned 25 last week! Each year I’m feeling more appreciative. My boyfriend flew in from Chicago to help me celebrate. When I picked him up from the airport, he had a bouquet of lilies (my favorite) to give me; we try and keep things romantic as usually our time together is short and sweet. Now I’m writing to you from Chicago, where we celebrated his birthday. We plan on seeing a few good movies, going ice skating, and relaxing until the New Year.
What’s in these quinoa flour waffles?
But of course, I had to take some time to blog about these incredible quinoa flour waffles. I wish you could see how serious I am about them; they are SO easy to make. To keep them light, I used bananas, egg whites, and almond milk. There’s no butter or oil, and they’re gluten free, too! I love chocolate chips in my pancakes and waffles so I added a few, but you can always leave them out if you aren’t a fan.
I shared a few with my Mom because I wanted to get her opinion. She said they were the BEST waffles everrrrrrrrr.
If you’ve never used Quinoa Flour before, now is the time to try it out! It’s naturally gluten free, high in protein and a superfood.
The flour actually has an amazing texture that makes the waffles light and airy on the inside but still super crisp on the outside. I was completely taken by surprise!
Unfortunately quinoa flour can be difficult to find and a bit expensive. I usually purchase mine from Whole Foods, but you can also find it on Amazon or BobsRedMill.com.
I will definitely be creating more recipes with quinoa flour, so if you’re an avid AK follower I suggest stocking up on this amazing product!
These quinoa flour waffles are perfect after a workout and freeze well. I love topping them with a few sliced bananas and a little creamy peanut butter so it melted into the waffle pockets. Mmmm nothing beats breakfast for dinner.

125 Ridiculously Good For You, Sometimes Indulgent, and Absolutely Never Boring Recipes for Every Meal of the Day
Ingredients
- 2 cups Organic Quinoa Flour
- 2 teaspoons cinnamon
- pinch nutmeg
- 1 1/2 tablespoons baking powder
- 2 ripe large bananas, mashed (about 3/4 cup)
- 4 egg whites, lightly beaten
- 1 tablespoon vanilla extract (gluten free, if desired)
- 2 cup unsweetened vanilla almond milk
- 1/2 cup mini chocolate chips, if desired
Instructions
- Preheat waffle iron and spray with nonstick cooking spray. In a large bowl, whisk together quinoa flour, cinnamon, nutmeg, and baking powder; set aside.
- In a separate large bowl, combine banana, egg whites, vanilla extract, and almond milk until well combined.
- Mix in dry ingredients until well combined. Fold in chocolate chips if desired.
- Spoon batter into waffle iron and cook until steam stops and waffles are golden brown and slightly crispy on the outside. Repeat with remaining batter. Recipes makes about 8 Belgian waffles.

I’m obsesssssed with quinoa flour. It’s so light and airy, unlike most GF flours. I can imagine it makes an incredible batch of waffles, especially with all of the light ingredients you used.
It’s a shame it’s so expensive. It was up to $13 last time I was at Whole Foods!
Can quinoa flour be substituted in any recipe that calls for all-purpose flour?

You could possibly sub half of the flour for coconut flour. That might work.

I’m not sure, I haven’t tried it yet but I think it might! If it seems way too thick just add a little extra milk!

I’ve never used quinoa flour before, but after seeing these I think I need to! Not sure why, but I didn’t think it would be light and fluffy. Those waffles look ideal!
One thing I do that might make your quinoa flour a little cheaper is buy a large bag of quinoa and run it through my food processor until I’m happy with it. Then I seal it in a container and use it to bake with. I am so excited to try these waffles….my kids are gonna love them. 🙂

i couldnt find quinoa flour so i substitued for coconut flour – oops!!! didnt turn out as yummy as yours looks.. it was crumbly..

These didn't turn out great for me. Not enough flavor and were kind of floppy and falling apart. Think they would benefit from a little honey in the recipe for flavor.

I’ve tried making these twice, both times with disastrous results. I thought maybe I followed the recipe wronge the first time. My batter was runny and despite making sure my waffle iron was well oiled, they stuck and burned. BOTH TIMES! I’m so disappointed. I just don’t understand.
I tried making these this morning following the recipe exactly. The waffles looked beautiful but were defibitely not crispy at all. When we ate them they were SO bitter we ended up giving them all to the chickens! What did I do wrong? I have never used quinoa flour before that- is that just it’s taste? It was like bitter metal. Yuck! Sorry.
It might have been the quinoa flour! Often times it can have a bitter taste. Next time I might recommend adding some honey to the batter. Sorry to hear you didn’t like them.

I made these with a few slight modifications. When the batter was too thin, I added about a half a cup of oats to thicken it up. I blended it all in the blender too. I also added some agave for sweetener, used 3 whole eggs instead of egg whites and omitted the chocolate chips.
I used whole quinoa and toasted it on the stove before grinding it. Since I got my quinoa for $3.99 at Aldi’s that helped to keep the cost down some.
They were a real hit with the kids and I’m glad that I’ve found a recipe that can incorporate quinoa so discreetly since my husband isn’t a big fan of it.
Does this recipe make 6 waffles or 8 and is the nutrition info for 1/6 or 1/8 of recipe? Nutrition info says 6; notes say 8. Thanks!
The batter was very runny and didn’t cook through for the 2 nd time around – is the amount of milk right ?
Yes, it should be, I’ve made these several times. Perhaps try reducing the amount of banana if you are having trouble. It could also be your waffle iron, if it’s older? I use a professional grade Kitchen Aid belgian waffle iron.

My waffle machine broke I failed to make the waffles turned it into pancake batter by thinning it a little more and they turned out awesome.
