The Best Vegetarian Chili Ever

STEP 1

Add olive oil, garlic, onion, carrots & red bell pepper to a pot over medium high heat

STEP 2

Add sweet potato and green chiles and cook for 5-7 minutes

STEP 3

Add chili powder, cumin, dried oregano & garlic powder

STEP 4

Add paprika, cayenne pepper, salt & pepper and stir to coat the veggies

STEP 5

Add crushed tomatoes and vegetarian broth to the pot

STEP 6

Stir in black beans, kidney beans & frozen corn. Bring to a boil then simmer to thicken

STEP 7

Once chili has thickened serve with cilantro, avocado, lime wedges and tortilla chips
