How to freeze zucchini
I’m sure that if you planted zucchini this year it took off like a weed. Don’t worry about using it all up at once, there’s a way to make it last aka how to freeze shredded zucchini so that you can use it for baking later.
- First, wash the zucchini and shred it.
- Next, squeeze all of the excess moisture out of the zucchini with a paper towel or cheesecloth.
- Measure out 1 cup at a time, so that your zucchini is pre-measured for you once you’re ready to bake or cook with it.
- Place your shredded zucchini in a small sandwich bag or a freezer-safe reusable bag. If you’re using a regular sandwich bag, double bag it with a freezer ziploc bag or place in a freezer safe container. Label it with the date you packed it on.
How long does zucchini last in the freezer?
Your frozen shredded zucchini will last in the freezer for up to 3 months. Basically all summer! I recommend freezing a bunch towards the end of summer so that you can enjoy all of the delicious zucchini recipes once winter rolls around.
Defrost and use it in your favorite recipes
Once you’re ready to use your zucchini, simply thaw to room temperature, squeeze out the excess moisture (again) and use like you normally would in recipes! Here are some of my favorite zucchini recipes to try:
