Happy Thursday, everyone! I just got back from Maine where I soaked up every ounce of beautiful weather, lobstahhhh and blueberry farms galore. I was there on a press trip discovering all things blueberries, which include blueberry picking on actual blueberry farms. Have you ever been to Maine?! If not, start planning a trip because it’s incredible there.
But today we’re not talking blueberries, we’re all about chicken! I’m not sure if you guys remember but a few months ago I flew out to Minnesota to film videos for Just BARE Chicken and their Living Lean & Clean Campaign — a series of videos talking about clean protein, shopping organic and more. Today’s Living Lean & Clean Campaign videos feature me chatting about quick and easy meals (one pan dinners FTW!) and also bento boxes aka one of the BEST ways to prep your lunch. Seriously though, who wouldn’t want to eat out of an adorable little box made for adults and kids alike? And since we’re chatting bento boxes, I should let you know that they just so happen to be the perfect vehicle for your post workout snack.
Four ounces of cooked chicken breast provides you with around 20g protein, a great way to refuel after a booty kicking session at the gym, and rebuild muscles. It’s also perfect to keep in your fridge for a post workout snack OR as a meal.
Here’s the ratio I like to stick to when I put together my bento boxes:
Chicken + Grain + Fruit + Veggie + Fat
4 BENTO BOX POST WORKOUT NOMS:
- CHICKEN + TORTILLA CHIPS + SALSA + AVOCADO
- CHICKEN + WHOLE WHEAT WRAP + BELL PEPPERS + PEANUT SAUCE + SPINACH + APPLE SLICES
- CHICKEN + WHOLE WHEAT BREAD + AVOCADO + TOMATO + MIXED BERRIES
- CHICKEN + WHOLE WHEAT TORTILLA + HUMMUS + PEPPERS + BASIL + CHERRIES/GRAPES + ALMONDS + BELL PEPPERS
BONUS POST WORKOUT MEAL
Not only do I love using Just BARE Chicken for my go-to bento box snacks, but also for my sheet pan dinners. Their chicken tenders and skinless chicken thighs stay super juicy and hold amazing flavor. Try any of my chicken marinades here.
Sweet potatoes and brussels sprouts are perfect for throwing on the pan with your chicken. I sometimes get a lil’ fancy and toss everything in turmeric (everyone’s favorite) because it has wonderful antioxidant and anti-inflammatory properties, which is perfect after a workout. The beauty of sheet pan dinners is that they’re totally customizable! Just be sure to take into account cooking times of each things you’re adding onto the pan. This just made my day! I am packing for our holiday next week and was trying to do some meal planning as we’ll be doing a lot of biking (Alps mountains), swimming in the lake, and all that outdoor fun stuff. So excited!
